SHERIFF'S DEPARTMENT / WANTED LIST

There's a new chef in town.

Recipes that actually work.

I rode in to clean up the kitchen. Around these parts, we measure twice. Sheriff Chef enforces baker's percentages — outlaws round numbers, sloppy conversions, and recipes that lie to honest cooks.

THE LAW IN THESE PARTS

Around these parts, we measure twice.

Sheriff Chef is the mascot — and the unofficial enforcement arm — of ChefVault. He rode in from the high lonesome of the culinary territories with a kitchen scale on one hip and a calibrated thermometer on the other, and he is, as the saying goes, here to clean up the kitchen.

The territory was lawless. Recipes drifted into towns calling themselves "no-fail" while collapsing on the bench. Volume conversions rode in from corrupt cookbooks claiming a cup of flour weighed 120 grams when everybody who'd ever scooped a cup knew it was somewhere closer to 140. Hydration figures were unreliable, scaling was a coin toss, and honest home bakers were left holding the bag — usually a bag of ruined dough.

So the town hired a sheriff. He doesn't wear a star on his apron because he's looking for trouble. He wears it because trouble's already here, and someone had to draw the line.

The Sheriff's law is short. Measure twice. Convert never. Trust the gram. Recipes that pass through his jurisdiction come out the other side cleaner than they went in — every cup converted to a sourced weight, every weight cross-checked against a published table, every hydration percentage flagged and named. Outlaws still roam the open web. But once a recipe lands in your ChefVault, the Sheriff's jurisdiction begins.

WANTED / DEAD OR DELICIOUS

The wanted list.

Four outlaws. One reward. If you spot any of these in your kitchen, the Sheriff wants a word.

Inconsistent Hydration

Charged with riding into honest sourdoughs and turning them into batter without warning. Last spotted at 87% in a recipe labeled "rustic country loaf." Known to use aliases like "wet dough" and "hydration is just a feel thing."

aka The Slack Bandit

The Measurement Conversion Bandit

Wanted for systematically lying about flour weights. Tells honest bakers a cup is 120 grams when, depending on the day, it's anywhere from 110 to 156. Has caused dough disasters in at least 39 states and most of the territories.

aka "Close Enough" Carter

Recipe Math Anxiety

Holds honest cooks at gunpoint and demands they double a recipe in their heads at 7 a.m. Known to whisper "what's half of ⅔ cup?" into the ears of sleep-deprived parents. Considered armed and decimal.

aka The Long Division Kid

FREE CHEFVAULT

THE SHERIFF'S LAWS

Four rules. Posted on every kitchen door.

If you can't follow these, you'll be asked to leave town.

I.

Measure twice. Pour once.

A cup is a guess. A gram is a fact. Every ingredient in your vault carries both values — but when they disagree, the gram wins. Period.

II.

Round numbers are suspicious.

"Add 1 cup of water" is the work of an outlaw. Real recipes specify 235 grams because that's what the recipe author actually used. ChefVault hunts down the originals.

III.

The hydration band is law.

If your dough sits at 81% you are baking ciabatta whether you meant to or not. The Sheriff will mark the band for you in real time. Pretending otherwise is a crime.

IV.

Scaling respects the fraction.

½ × ⅔ is not 0.333333. It is ⅓. ChefVault returns the human number, not the calculator number. The Sheriff does not tolerate decimal trespass.
