screen-wake · step-pace · large-typeThe seven hydration zones every baker should memorize. ChefVault flags where your dough lands in real time, so you can hit ciabatta or sourdough on purpose, not by accident.
Stiff, chewy, hand-rolled. The driest dough in the chart.
Workable, structured, classic. The home-baker comfort zone.
Sandwich, country white, the everyday boule.
Open crumb territory. Sticky but shapeable.
Slack, bubbly, no-knead friendly. Bench scraper required.
The Tartine zone. Glossy, custard-y crumb. Demands technique.
Pancakes, crepes, popovers. Pourable, not shapeable.
ChefVault was designed and coded by David Bryan Smith — better known on marquees as America's Gentleman Hypnotist. Software engineer by training, stage performer by trade, obsessive home baker by 2 a.m.
It started because every recipe app on the market still asked "1 cup of flour, packed or sifted?" while his sourdough collapsed on the bench. So between green rooms, red-eye flights, and cruise-ship shows, he built the recipe vault he actually wanted.
