Baker's Hydration

Real-time percentage as you build the dough. See exactly where you sit across the bagel-to-batter spectrum — and what changing the water by 8 grams actually does to crumb structure.

50% – 100%+ tracked live

A full-screen, ingredient-by-ingredient kitchen view. Screen stays awake. Steps step themselves. Designed for sticky fingers and 300°F ovens — no scrolling, no squinting, no panic.

HYDRATION ATLAS

From bagel to batter — every band, mapped.

The seven hydration zones every baker should memorize. ChefVault flags where your dough lands in real time, so you can hit ciabatta or sourdough on purpose, not by accident.

50–57%

Bagels & Pretzels

Stiff, chewy, hand-rolled. The driest dough in the chart.

58–63%

Pizza & Bread Rolls

Workable, structured, classic. The home-baker comfort zone.

64–69%

Standard Loaves

Sandwich, country white, the everyday boule.

70–74%

Sourdough & Artisan

Open crumb territory. Sticky but shapeable.

75–79%

Ciabatta & Focaccia

Slack, bubbly, no-knead friendly. Bench scraper required.

80–85%

High-Hydration Sourdough

The Tartine zone. Glossy, custard-y crumb. Demands technique.

86%+

Batter Territory

Pancakes, crepes, popovers. Pourable, not shapeable.

FOUNDER

Built by a hypnotist between stage shows.

ChefVault was designed and coded by David Bryan Smith — better known on marquees as America's Gentleman Hypnotist. Software engineer by training, stage performer by trade, obsessive home baker by 2 a.m.

It started because every recipe app on the market still asked "1 cup of flour, packed or sifted?" while his sourdough collapsed on the bench. So between green rooms, red-eye flights, and cruise-ship shows, he built the recipe vault he actually wanted.

From the founder

"I built ChefVault because I was tired of recipes that lie. Every ingredient carries both cups and grams, hydration is live, and scaling gives you clean fractions — not decimals you can't measure."
